Chef Nalan’s culinary journey began in a home deeply rooted in tradition, healing, and the quiet wisdom of Ayurveda. Coming from a family with a long legacy in Ayurvedic practice, he grew up understanding that food is far more than sustenance: it is balance, nourishment, and care.
His earliest inspiration came from his mother, Geetha, whose intuitive cooking and deep knowledge of Ayurvedic principles shaped his perspective on food. Watching her cook was not simply about learning recipes; it was about understanding how ingredients, flavors, and intention come together to support well-being.
Today, Chef Nalan blends Kerala culinary heritage with global influences, creating dishes that honor tradition while embracing creativity. His cooking reflects both where he comes from and the cultures he continues to explore.
Philosophy - Food as Healing
Chaf Nalan believes in “Annam Parabrahmam” which translates to Food is the supreme divine reality. And when something is divine, it invariably becomes powerful. His mantra is “Annam Mahashajyam” which means Food is the supreme power.
For him, cooking is not just a craft, it is a practice rooted in wellness. He believes that every ingredient has the potential to nourish, restore, and strengthen when chosen thoughtfully.
Influenced by Ayurvedic wisdom, his approach emphasizes balance, freshness, natural ingredients, and mindful preparation. Food becomes not only something we enjoy, but something that supports clarity, energy, and overall well-being.
Chef Nalan often says that when you correct your plate, you begin to correct your life. He believes many of the imbalances we experience like fatigue, restlessness, recurring health concerns can often be traced back to what and how we eat. By consciously choosing foods that suit our body, season, and lifestyle, we give ourselves the foundation for true vitality. For him, wellness is not about restriction or trends, but about restoring harmony through everyday meals that heal quietly and consistently.

In 2024, he has awarded the Dr. MGR Culinary Maestro Award 2024 by Dr.MGR University for blending Kerala cuisine with contemporary flair.
He also won the prestigious Governor's Indigenous Award of Excellence by the Governor of West Bengal for promoting traditional Indian cuisine and sustainable culinary practices in 2024.
